This elixir is more like a dessert, really. So deliciously decadent, you won’t believe it’s good for you. Drink any time of the day. Yup, even breakfast. Tell them I said so.
Frozen Mango & Cream Elixir
Serves 2

1 large mango, peeled, chopped into small pieces, and pre-frozen
1/2 cup coconut water
1 – 2 tbsp raw agave nectar or raw honey (optional – you could add a squeeze of lime juice instead, if you don’t have a sweet tooth)
Small handful ice
1/4 – 1/2 cup coconut cream (from a can)
Fresh mango slices & mint leaves, to garnish (optional)
Method

1. Pop frozen mango pieces, coconut water, agave/honey and ice into a blender.
2. Blend on high speed until smooth and creamy. If it gets stuck or looks too thick (like sorbet), add a little more coconut water.
3. Pour into 2 glasses.
4. Top each glass with a layer of coconut cream.
4. Garnish.
